Walk around your garden and collect as many wild herbs and salad greens you can find in your lawn and veggie patch or under the trees. Dandelion grown in the veggie patch turns softer and less bitter.
We use Leaves of dandelion, plantain, nasturtium as staple plus yarrow, peppermint, lemon balm, rocket, garden cress, comfrey, parsley, sorrel, chickweed, beet greens. Add flowers from sage, rosemary, borage, calendula, rocket.
We love grating daikon into this salad, it taste fresh and juicy and is beneficial for digestion and also the lungs, great this time of the year, more food as medicine!
Dressing:
Mix olive oil with apple cider vinegar (check our amazing herbal infused range on www.manasoulfood.co.nz for additional umpf)
Tamari, 1tsp. unhulled tahini, 1tsp. mustard
